Region Information
El Salvador is one of the smaller countries in Central America with a very dense population. Its coffee is known for its excellent balance. Like Guatemala and Costa Rica, El Salvador grades its coffee based on altitude—the higher the elevation, the better the coffee.
Apaneca is located in the western part of El Salvador, with elevations ranging from 500 to 2,365 meters. It is one of El Salvador’s most famous coffee-growing regions and the site of the country’s first origin designation. The Apaneca region borders the renowned Santa Ana Volcano region (last erupted in 2005), home to some of El Salvador’s larger and more well-known coffee farms.

Farm Information
Finca Lemus is located in Concepción de Ataco, Ahuachapán Ahuachapán) Province, El Salvador. Concepción de Ataco) Finca Lemus spans acres and is owned by 37 Thelma de Gutierrez and managed by her husband, · José Enrique · Gutiérrez. Thelma de Gutierrez), This couple leverages their experience as third-generation coffee producers to improve the farm’s productivity and health, including producing and applying microbial compost tea on the farm. Over the past two years, the pair has also diversified the farm by growing beans, which not only ensures the family’s food security but also serves as a nitrogen fixer, promoting the health of the coffee trees · and the production of (José Enrique Gutiérrez) coffee cherries.
Coffee Varieties This coffee is composed of Bourbon and Caturra. Bourbon is a natural mutation of Typica and, along with Typica, is one of the oldest existing coffee varieties. Its green cherries turn bright red when ripe. Compared to Typica, Bourbon has broader leaves and denser growth, with slightly higher yields, but it also has a year harvest cycle, making it a low-yield variety. Bourbon beans offer high-quality flavor with excellent aroma, bright acidity, and a sweet aftertaste, reminiscent of red wine. Caturra is a cross between Caturra and Mundo Novo. It inherits Caturra’s compact tree size, addressing Mundo Novo’s drawbacks, and also compensates for the fragility of Arabica cherries. The cherries are firm and less prone to dropping in strong winds. The main drawback is that its overall flavor profile is slightly less complex than Caturra’s.

Processing Method
This coffee is processed using the black honey method. First, freshly harvested coffee cherries are sorted, and only those meeting quality standards are selected for depulping. This step retains nearly all the fruit flesh and mucilage. The mucilage-covered beans are then dried on raised beds under the sun, with frequent monitoring of fermentation levels and moisture. The beans are dried to a moisture content of around %. The entire drying process takes approximately 2 days. Black honey-processed beans yield a richer flavor profile with pronounced sweetness and aroma.

مقدمة المنطقة:
El Salvador, known as the "Land of Volcanoes," is the smallest country in Central America, and its reputation in specialty coffee growing regions has already surpassed life itself. One can imagine that the quality of beans from here naturally won't be far off! Although coffee was mainly grown for domestic consumption, over the next 100 years it became a stable and important crop, especially in the late 19th century when the country's importance grew increasingly, at a time when the country's indigo exports were affected by the development of synthetic dyes and their widespread marketability. By the late 1970s, coffee exports accounted for 50% of GDP, but socio-economic and political turmoil plunged the country into civil war for more than a decade, and in the 1980s, various land redistribution programs and land reforms disjointed the coffee industry, leading to a market decline.
