Variety: Ethiopian Heirloom

Growing Altitude: 1800–2100 meters

The melodious name Yirgacheffe originates from the town of YIRGACHEFFE. Strictly speaking, Yirgacheffe is a sub-region of Ethiopia’s Sidamo state, located in the southwest of Sidamo. A few decades ago, it was part of a central state. Before the mid-20th century, coffee cherries here were primarily processed using traditional sun-drying methods. Due to the inconsistent quality of Yirgacheffe coffee beans, light to medium roasts were favored to highlight their bright acidity—a flavor profile that stood out when compared to "Old World" coffees.

Ethiopian processing methods have traditionally been dominated by sun-drying. It wasn’t until the 1970s that the first washed processing station in Yirgacheffe was established, along with the introduction of washed coffee technology and equipment from Central and South America. Thanks to this initiative, not only did the quality of green coffee beans improve significantly, but the citrus and lemon notes inherent in Yirgacheffe coffee were also amplified, resulting in a cleaner, brighter taste and establishing its distinctive flavor profile. Since then, Yirgacheffe has separated from Sidamo and become its own distinct entity. Yirgacheffe-flavored coffee quickly gained global popularity, becoming a classic beloved by coffee enthusiasts worldwide.

To promote the development of the coffee industry, the Ethiopian government registered the flavor profiles of three of its coffee regions (including Yirgacheffe Yirgacheffe®) as commercial trademarks in 2004. In 2008, the Ethiopian Commodity Exchange (ECX) was established, with coffee being one of the auctioned commodities. The government implemented quality grading and flavor classification for exported coffee beans to ensure buyers could purchase coffee with the trademarked flavor profiles.

The so-called "Yirgacheffe flavor" can be simply understood as possessing unique citrus and lemon fruit aromas, along with the fragrance of jasmine, a clean and bright texture, and a layered acidity—clean and free of off-flavors. According to ECX agreements, in addition to the town of Yirgacheffe (Yirgacheffe), coffee produced in areas such as Wenago in the north, Gelena Abaya in the west, and Kochere in the south can also be classified as Yirgacheffe-flavored coffee regions.

Most coffee in Ethiopia is produced through smallholder farming, with numerous local coffee cooperatives and processing factories responsible for processing green beans in their respective regions. Farmers deliver their harvested coffee beans to nearby processing factories built near water sources for unified processing, which are then sold under the name of the processing factory. This is also the case for Pioneer Coffee’s washed Kochere coffee beans.

Located on the African continent, Ethiopia has limited water resources, so traditionally, the ancient sun-drying method was used to process green beans—simply drying them directly in the sun. Due to the crude nature of this method, the overall quality of the coffee was relatively low. It wasn’t until 1972 that Ethiopia introduced washed processing technology and equipment from Central and South America to improve coffee bean quality. Unlike other regions, Yirgacheffe is a wetland, making it more suitable for washed processing. This approach also amplified the inherent citrus and lemon aromas of Yirgacheffe coffee beans, resulting in a cleaner, brighter taste.

Washed Process Steps: After harvesting, coffee cherries are placed in water, where immature cherries are removed using buoyancy. Then, a pulper removes the skin and pulp of the berries. The beans ferment in tanks for 18–36 hours until the mucilage layer breaks down. After fermentation, the parchment-covered beans are washed in channels, where specially designed channels and water flow remove low-density, lower-quality beans. Finally, the beans are dried on African-style raised beds. With multiple stages of defective bean removal, the defect rate is significantly reduced, resulting in higher cleanliness and clearer, more transparent aroma.

In the past, most of the coffee we drank had a dominant bitter and burnt taste, mainly because roasters roasted the beans dark, with the flavor profile centered around nuts and dark chocolate. To preserve more acidity, roasters only lightly roast Yirgacheffe coffee. Lightly roasted Yirgacheffe showcases pleasant fruity acidity and white floral notes, arguably ushering in a "new era of fruity-acidic coffee."

Pioneer Coffee believes that Yirgacheffe’s main highlights are its floral and fruity acidity, making it well-suited for light roasting to preserve more acidic and aromatic qualities. Shortly after roasting, Pioneer Coffee conducted cupping. The dry aroma of washed Yirgacheffe Kochere coffee features fresh passionfruit, citrus, and berry acidity. The wet aroma includes citrus, berries, with flavors of citrus acidity, berry sweetness, almonds, and a tea-like finish, leaving a honey-like sweetness. The body is light, the acidity is bright, and the cup is clean and refreshing.

مقدمة المنطقة:

Ethiopia is located in a land full of wonders, and all the Arabica coffees we have or have not tasted originate here. Documented historical evidence of coffee in Ethiopia dates back to the 4th-5th centuries AD. At that time, due to wars between ethnic groups, coffee spread with people's conquests and migrations to Yemen on the Arabian Peninsula. Later, with the rise of the Ottoman Empire and the spread of Islam, through various circumstances, Europe began to have coffeehouses and the coffeehouse culture that gradually formed along with them. Subsequently, Central America began to cultivate coffee, and India and Indonesia in Asia began large-scale commercial coffee cultivation. Having gone through several hundred years in this way, we have only now arrived at today's third wave of specialty coffee.
