A Catimor from Timor Hybrid 832/1 crossed with Caturra, fixed by pedigree selection at IHCAFE in Honduras and very close to T5175. Together with Lempira it accounts for much of the rust-resistant replanting in Honduras. Nuts and cocoa dominate, with low soft acidity and a thick gentle body - a reliable commercial Central American profile.

Brewing Tip

Pour-over at 92-93 °C, 1:14-1:15, medium grind with a slightly longer drawdown, to build body and a cocoa finish.
