Catisic — A Catimor from Timor Hybrid 832/1 crossed with Caturra, fixed by pedigree selection at the Salvadoran institute of coffee research, ISIC, within the PROMECAFE network. Best suited to the warmest zones and to acid soils; watch for Ojo de Gallo.

Brewing Tip

Pour-over at 92-93 °C, 1:14-1:15, medium grind with a slightly longer drawdown, to build body and a cocoa finish.
